Sour Cream Banana Bars

Another recipe coming at ya! I got this recipe from a co-worker and love, love, LOVE these banana bars! They are a great alternative to banana bread. They have sour cream in them {obviously} which makes them unbelieveably moist! I never know what to do sometimes with those leftover bananas we don't eat. I hate throwing them away, it seems so wasteful. Now that I've got this recipe, I'm going to make these instead of plain old banana bread.

Here's the recipe:
1 1/2 cups sugar
1 cup sour cream {I used light}
1/2 cup margarine, soft
2 eggs
1 1/2 cups bananas, mashed {3 large}
2 tsp vanilla
2 cups flour
1 tsp salt
1 tsp baking soda
1/2 cup nuts, chopped

Mix sugar, sour cream, margarine, and eggs in a large mixer bowl on low speed, scraping bowl occasionally-1 minute. Beat in bananas and vanilla on low speed-30 seconds. Beat in flour, salt, and baking soda on medium speed, scraping bowl occasionally-1 minute. Stir in nuts. Spread dough in greased and floured jelly roll pan {15 1/2 x 10 /12 x 1}. Bake at 375 degrees until light brown 20-25 minutes. Cool, frost with cream cheese frosting or powdered sugar thinned with lemon juice.

I used the powdered sugar with lemon juice and it was divine! The mixture soaks into the bars and makes them oh so good! Give these a try!
